I haven't seen an official FAQ comment on this one, but our little group has always said
that unless a card specifically addresses rolls of less than 1 or greater than 6, then the
roll just defaults to the highest/lowest number. If you roll a -2, it still counts as a
1, and if you roll an 8 or something, it defaults to a 6. Keep in mind, some cards DO
specifically address the greater than 6 issue (most notable Widow's Trap, ewwww...).
