It used to be that the two were different (see the rules in Fields of
Fire), but these days they are essentially nothing more than flavor.

Only if you, like you did, need to convert the weapons back :) The simple
solution is to simply keep using the FOF rules -- it's not as if they are
incompatible with SR3 rules.

Hello, I have another question about converting my old 2nd
edition character to 3rd edition.

Is there any difference (rules-wise) between regular ammo and
caseless? I can't find anything, except for the rule that weapons
can only fire one type or the other. There is no difference in
cost or shots-per-clip.

One of the last things I did with 2nd edition was to upgrade my
character's weapons to caseless ammo. (Which was introduced
in Fields of Fire, I think?) Caseless-firing weapons and their
ammo were more expensive, but allowed extra bullets per clip.
For example his SCK 100 went from 30 to 36 rounds in a clip.

Now, in 3rd edition, he is apparently back down to 30 rounds.
It's as though caseless technology has actually regressed in the
last several years.

Is there any real point in differentiating between standard and
caseless ammo? If they cost the same, why not just say that
everyone has caseless?

Have I missed something in the rules? Thanks for any advice.

The primary difference is really a role-playing consideration. You can't
field reload caseless magazines, but they don't leave brass that you have
to pick up.

Also, far as I know belt-fed weapons cannot be caseless. The propellant is
not solid enough to be part of the belt.
