They can be easily replicated with some spells and adept powers
(this is even easier if you have MitS), so a Jedi would be similar to a
physical mage (basically a priority A magician who splits his Magic
Attribute between adept powers and a Magic Rating for spells and
spirits). For rules works, they could use hermetic mage rules, but they
tradition would be of course "Jedi" :) .
As for weapons (the Light Saber, of course :) ) in one of the
Plastic Warriors books, IIRC, there's a monosword that's quite similar
,using a monowire made rigid by electrical current, it cuts nearly
anything (doing 11S damage), and even glows with a blue light! :) .

I do play a Jedi right now (well I did just over an hour ago...).

I just created him as a shamanic sorceror and gave him
"The Force (Light Side)" as his Totem.
Dis-/Advantages were: +2d Manipulation Spells, -1d Combat Spells.

He is a dwarf and guess who was his Avatar to guide him through his
(solitary) Initiations?
(The Winner gets as many Attack Helicopters as he can carry under his arms)

He mainly uses mental manipulations and a Stunbolt or two inbetween.
BTW: Have I mentioned that he is a pacifist (no TOTAL pacifist)? :)

As for THE weapon :)
As Bira already mentioned, there's this monowhip-kinda-thingy, but
there's also th possibility of making it a spell which is then
put in a Sustaining Focus or anchored.
Sustained Damaging Manipulation, Touch Range, Elemental Effect (Light),
(just look at the logs, there was a Discussion about this kinda spell
not too far ago)

The dark jedi I created started out with 2 spells
levitate and influence from the older companion
book. The double lightsaber I created using the
armor and damage rules for the monowhip, so basically
I made the DLS by using a stiffer wire that projects
from the handle on both sides, for the light I used
some luminescence that was used for safety reasons.
The sounds was added for terror. Soon Ill turn him
into a physical mage and take spark.
