First of all its O-R-K. As for why do Orks have their own cuisine, it's
actually really simple. This is speculation but IMHO Orks need a signficantly
higher concentration of proteins in there diet (SRII blue book says that they
are omnivorous, but perfer meat.). They also might have weaker taste buds
than the other metaspieces which causes them to use lots of spices (Ork cuisine
is very, very spicy). Thus Orks made up a type of cuisine to fit their dietary
and enjoyment needs.

Your forgetting that Trolls general cohabit with Orks. There are more than
one reason why the two are linked by the slang term "Troglidite".

Dwarfs, the forgotton metatype. What do they have that makes them distinctive?
Nothing. How often do they appear in SR adventures? No very often. Hell,
even on Shadowtk there are not many dwarfs.
