Assuming that one could somehow get a DNA sample of a great dragon while
said dragon is in human form, will one have dragon DNA or human DNA?

I'd say dragon DNA. This DNA probably wouldn't be very useful for ritual
magic or cloning, however, as the dragon is likely to know some
"sterilization" rituals.

Yeah, like turning everything in a four block radius around and including
the DNA sample into something resembling charcoal biscuits.

That sounds like one of those retorical/philosophical questions, like "If a
tree falls in a forest with noone around to hear it does it make a sound?"

IIRC a Dragon in human form (in the same way as a human mage in elven form)
retains its body score, natural armour, and a good chunk of its critter
powers...(stop me if I'm wrong here)
Therefore I would say that its DNA will probably be draconic BUT that as the
ability is more of less innate one of the Metagenes will be in the "Human
form" position.

Oh I wish I had Critters handy.
