I'm really leaning toward a specialized adept myself. I'm really looking
for some detail on the abilities that the Jedi are supposed to have.

Try the Star Wars RPG, or the CCG if you want it on cards. My copy of the
book is downstairs right now, but IIRC it boils down to that there are
three Jedi powers: Alter, Control, and Sense. Within each of these, the
Jedi can learn specific abilities (some abilities require more than one
power) much like SR's physad abilities with a bit of spellcasting thrown
in.
