Well, how much money do you want to spend here?
A non-metallic gun will fool basic security. A gun with
sealed propellant, or better yet no propellant, will fool
good security. At the high end, though, people will
use things like NMR scanners, so your choice of materials
will probably come down to plastics, spun carbon fibers,
and diamond slivers.

Very exotic; very expensive. But sometimes worth it.

Also, never neglect the value of bribing the bored, underpayed
guard running the detector.
