Wrong. Water _is_ polar, all the time. Pure water is mostly H2O, but this
dissolves into H3O+ and OH-, a very (VERY) litle bit. Also, ever water
molecule has a + and a - side to it, which causes it to form H-bridges.
Without those bridges, the boiling point of water would be somewhere
around -150 degrees C, and that would mean no life as we know it could
exist...
