He was making a play on words twice...one for being from New Jersey, and
two a Jersey cow (ergo the cow print long coat, and a bull-like head).

Mintotaur and Ogre aren't just "names" for trolls and orks, they're
diffreent expressions of the meta-types. Minotaur being shorter and
stockier than trolls with heads that resemble a bull's and not nearly as
many knobs and bumps on they're skin. Ogre's are shorter and stockier
than their ork cousins, with little body hair and not nearly as many
skin blemishes as well. The game stats however remain the same for
both...
