For Hermetic-type magic with a Catholic feel, see Katherine Kurtz's Deryni
series. The rituals are mostly in Latin, and they invoke various Angels
that I've never even heard of [and I graduated from Catholic school].
They're also a good read, fantasy with a realistic Medieval feel.
