Go and watch the british series of Ultraviolet (which appears to have been
slightly influenced by Dark Conspiracy! ;-)). It featured a weird secret
service kind of group run by the Vatican that hunted Vampires. Perhaps the
character could be a member of a similar group?
As for having one of the most completely librarieson the Occult, I wouldn't
discount it, but the Church [or at least members of the church rather than
the Vatican per se] seemed to get confused between Satanism, the Occult,
Paganism, Self-help and all that drek.

Research some of the old religious groups like the Knights of Templar, and
the Inquisitors; it would seem better to base the character on them if s/he
is to be a 'threat' hungter than it is to base him/her on a Priest. A good
history book covering the relationship between the church and the state in
medieval Europe would probably suffice for inspiration.
